It has been an easy 30 days converting to a full on vegan for me and my wife. Last night she made miso soup with seaweed, spinach, onions, and mochi. It was delicious and satisfying and I enjoyed to large bowls of it. That was the first time I have eaten mochi. The texture was interesting and the taste wonderful.
This morning my wife asked me if I would like some mochi for breakfast. I thought for a second mochi for breakfast, why not? She cooked them till they were puffy and put organic maple syrup. When I ate it with my green tea, I thought to myself holy mochi. They were like french toast or belgian waffles. Incredible tasting and looking forward to eating a whole lot more.
She has been taking pictures of all our meals, and when I get some time I will post pictures on my blog. Cheers!
